I was excited when the Food Editor from Clean Eating magazine pitched an idea to create a fast, fresh and healthy meal plan for their June issue. We shot back and forth many ideas to deliver a final product that I hope you'll find to be nutritious, delicious and do-able. If recipes like Coconut and Curry Scallops and Chicken Bruschetta with Artichoke Salad are up your ally, click here to get cooking FAST in your kitchen. Read the recipes' instructions first as they will keep you moving from start to finish in order to finish in record time. (Sharp knives also help speed up meal prep if you're ready to make an investment.) Added bonus: it even comes with a grocery list that includes specific product recommendations (mainly snack foods) that you may enjoy! I hold no conflicts of interest for the brands/products that are recommended. And just to be upfront, the calories listed may be too low to meet many people's needs, but believe it or not I had to negotiate more of adequate caloric needs and was a big leap at the time to have more than 1200-1500 calorie recommendations. Please use the meal plan as a starting place and listen to your hunger and satiety to guide you. Let me know what you think!
