Calling All Super Bowl Party Hosts: Two Tasty yet Healthy Recipes for Buffalo Chicken


I know what you may be thinking about this title-why "healthify" buffalo chicken dip and buffalo chicken wings for a Super Bowl Party? It happens once a year!! And I agree. If this is your time to have a treat, go for it. However these two recipe ideas are quite yummy and even if you don't want to modify your Super Bowl party offerings, can certainly be used when you have another buffalo wing craving. I use this buffalo chicken dip recipe to make buffalo chicken wraps, which my husband finds to be a delicious and satisfying lunch. These recommendations are coming from a place that if something that is lower calories, has higher quality ingredients AND is satisfying then it may better help to meet your needs. Many of us have slowing metabolisms whether it be due to aging or decreases in physical activity, so this can be a helpful way to match your changing needs. In addition, these ideas will reduce the saturated and trans fat that fried foods contribute and add nutrients are body needs for good health.

Regardless of WHAT you choose to eat, attempt to take a breath to slow down and enjoy your food instead of eating on autopilot. You'll be surprise how much better you feel post-game!

Healthified Buffalo Chicken Dip

Serves 10

-This recipe cuts calories by over 150 calories-108 cals vs. 278 calories per serving and still gets rave reviews.

4 ounces light cream cheese or Neufchâtel cheese, softened

1/2 cup non fat plain yogurt

1/2 cup 1% cottage cheese*

6 tbsp Franks Red Hot

2 ounces blue cheese (1/2 cup)

1 tsp Dijon mustard

2 cloves garlic, minced

10 ounces cooked boneless, skinless chicken breast either shredded or diced

1 cup celery

Step One: In a microwave or oven safe bowl add the above thf first seven ingredients. With an immersion blender or hand mixer, mix until smooth.

Step Two: Stir in chicken and celery.

Step Three: Either bake in oven for 20 minutes at 350 degrees F or microwave on level 8 for 5 minutes, stirring halfway through.

Step Four: Enjoy with nacho chips, celery sticks or pita chips if eating as a dip or in a wrap with romaine lettuce leaf as a meal.

*If whipped cottage cheese is available at your grocery store then may be able to hand mix with a wooden spoon to achieve a smooth texture

Jolley's Famous Chicken Wings

This second recipe is thanks to my husband. Buffalo wings are one of my favorites and his grilled version tastes so fresh and juicy. (Sorry no picture yet)!

2-3 lbs chicken wings/drumsticks

Kosher salt, ground black pepper and garlic powder to taste

2 tbsp butter, melted

1/2 cup Frank's Red Hot or BBQ sauce like Mr. Stubbs

Step One: Heat up the grill. Put chicken wings and/or drumsticks in a large mixing bowl. Season with salt, ground black pepper and garlic powder.

Step Two: Grill both sides until done and crispy.

Step Three: In a clean bowl, mix butter and Red Hot or BBQ sauce. Toss chicken until covered.
